Description
Subproject 3 is implemented by the Laboratory of Process Engineering and Preservation of Food and the Laboratory of Food Chemistry and Analysis of the Agricultural University of Athens (AUA). Subproject 3 deals with the exploitation of food wastes through a biorefinery approach for the production high added value products and with the organization, operation and sustainability of the Infrastructure in order to contribute to its preparation for the implementation phase.
Main objectives
1. The exploitation of coffee wastes through a biorefinery approach for the production of bio-colours and additional innovative products for the food industry, the subsequent encapsulation of these bio-colours and the production and mechanical modification of fine flours.
2. The exploitation of citrus wastes through a biorefinery approach for the production of bacterial cellulose and “clean” food additives.
3. The development of innovative services and procedures to support the organisation, operation and sustainability of the Infrastructure.
