Novel Foods: from Bioactive Constituents to Bioactivity Assessment

FOOD INNOVATION RI and the Department of Nutrition and Dietetics of the Harokopio University of Athens are organizing a “hybrid” workshop entitled “Novel Foods: from Bioactive Constituents to Bioactivity Assessment” that will take place on 7th of June 2022 at 10:30 – 12:00 EEST.

The invited speakers will cover the following topics:

  • Mediterranean fruits that act as sources of bioactive compounds
  • Fortification of bakery products
  • Novel food development: modelling food ingredients and encapsulation techniques
  • Dietary intervention studies for the assessment of food bioactivity
