Starter Culture Production Using Whey for Multiple Applications This demonstration plant concerns the production of a kefir culture which can be used in the food industry as bakery yeast, an ingredient for protein-rich animal feed, and a starter culture for cheese maturation, or for the production of kefir products from milk and alcohol from whey.
Wine Making at Extremely Low Temperatures
This demonstration plant concerns the fermentation of grape must at very low temperatures in batch or continuous mode using encapsulated cells for the production of wine with superior quality characteristics, reduced sulfites and low cost.
